Not that it is the nicest looking plate but they do make a larger remodel / repair blank cover that will completely cover your holes...

Most any residential faucet of a good brand will offer a cover plate in the same finish. Most likely larger since RV's are smaller. Drill new holes in the top and use the cover plate and your done....
