You all know that the Professor and I are full-timers. Plus, I am the author of a special RV cookbook that was done in celebration of the RV Centennial which occurred in 2010........ so I thought it would be so cool to share favorite recipes here on this thread.

I know that you guys love to cook sometimes as much or MORE than the gals!! So whether it's in the REDWOOD kitchen, outside on the grill or campfire....Place your favorites HERE!!! It will be fun to see what our owners are eating!!! Don't be bashful!!!

And who knows.....maybe this thread will become big enough to possibly make our own REDWOOD COOKBOOK!!! That would be awesome!!

Here's a start
DIRTY PIG
Thick sliced bacon (whatever quantity & flavor you want}
Chocolate almond bark or another dipping chocolate.

Fry bacon until just crisp.
Drain and cool on paper towel
Cut into about 1 in. pieces.
Dip in melted chocolate and place on wax paper.
Cool and let chocolate set.
Enjoy the chocolate, slightly salty, smoky flavor.

Lady E - Great idea, well here goes for # 1 of hopefully many.

Beef Wellington
- Mushrooms, I use at least 1 of the regular mushroom containers from Costco
- Onions, I use red and/or white onions so they are almost equal quantity to the mushrooms
- Beef stock, a few pints
- Garlic, lots
- Spicy pepper medley, according to taste
- Sherry, 1 bottle sweet sherry
- Brandy or Scotch Whisky, couple of glugs (optional)
- Spices, use various depending what's in the cupboard (marjoram, thyme, dill, etc)
- Butter, about 1 lb
- Filet of Beef, about 3 lbs from the front of the tenderloin
- Bacon, sufficient to wrap the filet for roasting
- Puff Pastry
- Cornflour

Mushroom Sauce - make the day before
- Finely dice the onions & mushrooms
- Caramelise onions in large pot with the butter and lots of garlic
- Add mushroom, stir and mix
- Add beef stock, sherry and brandy, stir
- Add spices to flavour
- Bring to boil
- Simmer to reduce the liquid, can be up to 5 - 6 hrs
- Taste, if required add a little Demerara Sugar
- Add cornflour to thicken

Filet
- Season with salt/pepper
- Wrap with bacon, to prevent drying out during cooking
- Cook at 375 - 425 for about 45 mins
- Place on rack to cool

Roll out puff pastry
Place mushrooms on pastry and place filet on top
Cover remainder of filet with mushrooms
Roll pastry over roast and seal
Brush pastry with egg wash
Cook at 425 for about 40 mins until pastry is browned
Remove from oven and let stand 10 - 15 mins

Enjoy with full bodied red wine.

JJ - You'll have to work on the boss, as she is normally the one who convinces me to make it. If it's raining in Cannon Beach anything is possible.

The perfect Steak
4 steaks. (preferably new York strip) 1 inch thick
2 cloves garlic
2 table spoons worster
2 tablespoons balsamic vinegar
Freshly ground pepper
2 teaspoons Dijon mustard
2 tablespoons soy sauce
2 tablespoons olive oil

Trim excess fat from the steaks, In a dish or plastic bag, combine the remaining ingredients

Marinate the steaks for one hour or up to 24. Hrs in the fridge. Bring the stakes to room temp one half hour before grilling for mor even cooking

Preheat grill on high and brush on olive oil to the grills cook to your desired rare etc and enjoy.

A nice bottle ow Merlot goes well.

Hi JJ - just saw you post.

Wow - Joyce & Kevin have an amazing wine cellar, I'm envious. For dinner Joyce brought a 2005 Shiraz from a winery in the Barossa Valley, just outside Adelaide, Australia. Brilliant wine that was the perfect compliment to dinner.

Great meeting both of you & hope our paths cross again during future travels.

Kevin - I'm still drooling over your 1.2, that's a nice fast lens. Now I have to decide if I need a new lens orupgrade to the 5D Mk III body.

Hey if you guys can find a Total wine and more near you check it out 3000 wine prices beat everyone just got 12 bottles of wine and two 1.75 bottles of Jonny Walker Black 46.90 each and there on line

for your suggestion to try a baking stone in our propane ovens to better distribute the heat while baking. I bought one from Pampered Chef and put it in my oven, like you suggested, on the shelf, just above the flame (not on the wire rack). A couple of days ago, I made a rhubarb pie, and it turned out great! I keep a thermometer in my oven & checked it occasionally and found the temperature stayed consistently at 350 degrees. I do always have to keep the setting turned up about 50 degrees higher on these ovens, but I was very pleased with how the pie baked and browned evenly, just like my oven at home!
