what would be the best way to put 4x8 sheets of foam under the slide out?

Hopefully you mean while parked stationary for the winter?
There's no way you could do so & still operate the slides.

I would use command strips on the Bottom and that way all pcs can be removed easily

Exactly my thoughts.
I use them to hang pictures & attach other items to the walls. If 2 seems like they'll hold it I add 4 just to be sure. Clean both surfaces with alcohol before using the strips.

You can also use the command strips that are designed for picture hanging. That might work better
