They make a white 3/8 pex line that is supposed to more flexible than the normal pex water lines. You'd have to use reducer fittings going from the 3/8 to the 1/4 size at both ends. Pex water lines...

So far I've been fairly happy with our factory installed ice machine. Thankfully I haven't had the leaks others have experienced. If I do start getting leaks, I'm going to figure out a new plumbing...
